The A LA CARTE menu


COLD FIRST COURSES:

  • Terrine of home-made goose foie gras and toasted brioche, apple and mango compote (+5.00€)
  • Salad of home-smoked ham with Bordeaux ceps and olive oil
  • Carpaccio of marinated line-caught sea bass, freshly prepared to order, with basil and toasted “Bucheron” bread croûte
  • Medley of lamb’s lettuce, smoked salmon, lardons, croûtons and vegetable crisps

HOT FIRST COURSES:

  • Asparagus with mashed free-range egg and plain marinated parsley
  • Hot mousseline of langoustines with fresh morel mushrooms in a creamy sauce
  • Burgundy snail vol-au-vet with herbs

MAIN COURSES:

  • Milk-fed lamb, organic from les Fayais, oven-roasted, pot-au-feu of early spring vegetables (+5.00€)
  • Simmental rib-eye beef steaks with ground pepper and ‘sauce amoureuse’
  • Free-range guinea fowl, Burgundy coq au vin style
  • Roasted line-caught Breton sea bass, aubergines and quinoa, beurre blanc sauce with chervil (+€ 7.00)
  • Skate wing with caper butter, mashed potatoes and olive oil

CHEESES & DESSERTS:

  • Selection of "A Mon Chavet" farm cheeses, small walnut salad (+1 glass of red wine 6.00 €)
  • Sweet Herve vol-au-vent, radicchio with pecan nuts (+1 glass of red wine 6.00 €)
  • Pistachio parfait on a bed of coconut and tapioca jus, pineapple salad
  • Home-made ‘nougat glacé’ ice cream with raspberry coulis and fresh mint
  • Crispy basket filled with Bourbon vanilla ice cream and hot chocolate
